Capocollo di Martina Franca
Always
in Puglia is known that the best sausages come from Martina Franca,
in the province of Taranto, and among these the most famous is
certainly the capocollo or capicollo, in the name by which the south
is called the cup or loin, that part of the pig's neck and chest.
Capocollo of Martina Franca is designed to withstand the climate of
the area of origin, inadequate - in theory - the production
butcher. From this antique know how is born the practice of light
smoke, and the long marinating in brine and leather with mulled wine:
processes useful to preserve and keep intact and healthy the sausage.
And that gives it a remarkable organoleptic richness.
It
has a nice red wine color, slightly mineral notes on the nose,
combined with the impact of the spices. The flavor is tender,
fragrant and acid-back aromatic feel, well supported by the quality
of the meat.
