Red Onion from Acquaviva delle Fonti
The”
Cepodde d'Acquaviva”, as it is known in local dialect, is grown in
the area surrounding the town of Acquaviva delle Fonti, in the
province of Bari. Known for its sweetness, the onion Acquaviva delle
Fonti is recognizable due to it’s typical flattened shape : a large
disc with a thickness of 2-3 cm wide, up to a foot, and weighing
about 500 grams. Its color ranges from red to violet and carmine
clears, inward, to become completely white.
The cultivation takes
place in the tradition of an ancient and natural way. It is sown in
September, a waning moon, and harvested by early July until August.
To the red onion from Acquaviva delle Fonti is a dedicated a
festival during which you can taste typical local dishes in many
preparations, such as rustic breads and stuffed with red onion and
ricotta forte.
